- 2 tsp chili sauce
- 1 tsp black sesame seeds
- 1 tsp white sesame seeds
- 1 tsp pickled ginger
- 1 tbsp chopped spring onion(s)

Delicacies from leftover fish
Once we’ve properly filleted and prepared our sushi fish, there’s usually some leftover fish. These leftovers shouldn’t be thrown away—they’re perfect for a delicious tuna paste, for example. In the sample recipe, simply combine the leftover tuna, chili sauce, white sesame seeds, black sesame seeds, chopped gari, and chopped spring onions and serve.
