Ingredients for 1 servings:
- 250 g flour
- 175 g butter
- 1 pinch of salt
- 6 tbsp water, ice cold
- 1 kg apples, crumbly
- 3 tbsp lemon juice
- 2 tbsp sugar
- 1 packet of vanilla sugar
- some cinnamon
- some ginger powder
- 2 tsp, leveled cornstarch
- possibly raisins
- 3 tbsp apricot jam
- 6 tbsp powdered sugar
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes

Combine the flour, butter, and salt in crumbs. Mix in the ice water and quickly knead everything together. Roll out two round sheets of dough between a cut-up freezer bag and line a greased pie dish with the first sheet. Prick the dough base several times with a fork. Mix the peeled, diced apples with the sugar, vanilla sugar, cinnamon, ginger, lemon juice, raisins (optional), and cornstarch. Fill the dough base with the mixture. Place the other sheet of dough on top and press the edges firmly together. Bake at 200°C for about 35 minutes. While still hot, spread with heated apricot jam. Once cooled, glaze with powdered sugar. I serve it with vanilla ice cream or warm vanilla sauce.
