a dream in lemon – delicious and light

In a bowl, combine the yogurt with the grated zest of two organic lemons. Add about three tablespoons of brown sugar and a generous squeeze of lemon juice. Stir until the sugar has dissolved. Then, in a casserole dish, I place a layer of ladyfingers and drizzle with limoncello. Spread a layer of lemon yogurt on top. Now add a thin layer of brown sugar. Then again, the ladyfingers with limoncello, and so on. In any case, I finish with a layer of yogurt, which is then sprinkled with more sugar. The whole thing should sit in the fridge for a few hours. Experience has shown that it tastes even better the next day! Tip: I never throw away the lemons without the peel. I squeeze the juice and freeze it in an ice cube tray. Perfect for cooking, baking, or for a Ramazotti after dinner… This dessert has always (!) been a hit and has been devoured in no time!
