Watermelon pudding from Sicily – deliciously refreshing and fruity…
Cut the watermelon into pieces and remove the seeds. Purée the prepared pulp with a hand blender. Set aside one liter of juice; the rest won’t be needed. Blend the cornstarch with 5 tablespoons of melon juice until smooth. Bring to a boil in a saucepan with the remaining juice, sugar, cinnamon, and clove powder. Simmer for two to three minutes, stirring constantly. Pour into six pudding molds or small coffee cups and refrigerate for 5 hours or overnight to set. Turn out and serve with the vanilla sauce. It tastes like a firm, upside-down cold soup. This dessert is very refreshing, visually impressive, and something different from a cream dessert!
