Raspberry tiramisu

Ingredients for 10 servings:

  • 450 g raspberries (frozen or fresh)
  • 3 tbsp espresso or alternatively cappuccino, boiled
  • 1 kg low-fat curd cheese
  • 150 ml whipped cream, stiffly whipped
  • 150 g sugar
  • 1 packet of vanilla sugar
  • 375 g mascarpone
  • 150 g ladyfingers
  • 100 ml Amaretto or other almond liqueur
  • 1 tbsp cocoa powder

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Thaw the raspberries or sort and wash them. Make an espresso or cappuccino and let it cool. Mix the low-fat quark, cream, sugar, vanilla sugar and mascarpone together well. Place the ladyfingers, sugar side down, in a large, shallow dish. Mix the espresso and Amaretto together and drizzle over the ladyfingers. Distribute the raspberries on the ladyfingers and spread the quark cream evenly over them. Finally, dust with cocoa powder. Leave to stand in the fridge until ready to serve. Tip: If children are eating with you or you want to omit the alcohol, you can also use 100 ml of cocoa with a little almond flavoring added instead of the liqueur.
