Ingredients for 4 servings:
- 100 g cake base (sponge cake)
- 100 ml apple juice, naturally cloudy
- 1 tsp cinnamon
- 1 small jar of apple compote (370 ml), chopped
- 1 lemon(s) (organic), the grated peel and the juice
- 350 g quark (low-fat quark)
- 70 g sugar
- 150 ml cream
- 1 small apple, red
- n. B. Cinnamon for dusting

Dice the sponge cake and place it in a glass bowl. Mix the apple juice with the cinnamon and saturate the sponge cake. Mix the apple compote with 1 to 2 tablespoons of lemon juice and spread it on the sponge cake. Mix together the quark, sugar, remaining lemon juice, and lemon zest. Whip the cream until stiff and fold in. Spread it in a cloud over the apple compote and let it sit in the refrigerator for a while. Before serving, wash, quarter, core, and slice the apple. Garnish the layered dessert with the apple juice and serve sprinkled with cinnamon.
