Ingredients for 4 servings:
- 1 class can/n apricot(s) (240 g drained weight)
- 200 g berries of your choice, mixed (frozen), thawed
- 2 tbsp honey
- 2 tbsp lemon juice
- 500 g yogurt (vanilla yogurt)
- 250 g quark (low-fat quark)
- 2 tbsp sugar
- 3 tbsp oat flakes
- e.g. mint
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Very easy, very quick – and looks great
Drain and chop the apricots. Set aside a few pieces and some of the berries from the berry mixture. Mix the remaining berries with honey and lemon juice. Blend the vanilla yogurt with the low-fat quark and sugar until smooth. Layer the yogurt cream, apricots, and marinated berries alternately in four dessert glasses. Top with the reserved apricots and berries. Sprinkle with oatmeal and serve garnished with mint, if desired.
