Marinated carrots

Ingredients for 2 servings:

  • 2 m.-large carrot(s)
  • 10 tbsp water
  • ½ tsp vegetable broth, instant powder
  • 3 tbsp vinegar, light
  • 1 tsp sugar
  • 2 tbsp olive oil

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel the carrots and slice them (0.5 cm thick). Bring the water, vinegar, vegetable stock, and sugar to a boil and simmer the carrots until slightly soft. Let the carrots cool in the stock, then drizzle with olive oil. If you like, you can also let them sit in the refrigerator overnight. A delicious antipasti dish!
