Mirabelle Piña Colada Jam

Ingredients for 1 servings:

  • 3 kg mirabelle plums
  • 1 handful of brown sugar
  • 1 pineapple
  • 1 can coconut milk
  • 3 pkt. gelling sugar, 2:1
  • 1 dashes white rum
  • 1 dashes liqueur (pinacolada, alternatively double rum)

Working time approx. 30 minutes; Cooking/baking time approx. 4 minutes; Total time approx. 34 minutes

exotic and delicious

Briefly boil washed mirabelle plums (approx. 3 kg), perhaps with a handful of brown sugar to let them steep until the next day. This will separate the flesh from the stone, eliminating the need to pit them! Now pass the mirabelle plums through a food mill. Combine the resulting jam (should be about 2 liters) with the gelling sugar, coconut milk, the chopped pineapple flesh, and the rum/liqueur (add this shortly before the end of the cooking time) and boil on top of the gelling sugar for about 4 minutes according to the manufacturer’s instructions. Immediately pour into hot, rinsed jam jars, then turn them upside down after sealing (makes about 12 medium-sized jars). You’ve got an exotic jam that you won’t find in stores!
