Matjes tartar on pumpernickel coins

Ingredients for 6 servings:

  • ½ bunch chives
  • 3 herring fillets
  • 2 small onions, red
  • 100 g cucumber(s) (mustard pickles)
  • 1 large tomato(s)
  • 1 tsp oil
  • 1 tbsp lime juice
  • pepper
  • 12 pumpernickel, small coins
  • 1 lime(s), filleted for garnish (optional)

Appetizer, snack, or finger food, can be easily prepared

Wash the chives and cut into fine rolls, except for a few for garnishing. Finely dice the herring fillets. Peel and finely chop the onion, and also finely chop the gherkins. Wash, quarter, and deseed the tomato. Finely dice the flesh. Mix all prepared ingredients with oil and lime juice. Season with pepper, cover, and let stand for at least 30 minutes. Season again. Serve the tartare on pumpernickel slices. Garnish with chives and lime fillets. Tip: The herring tartare can be prepared a few hours in advance and refrigerated, covered. A small variation: Diced apple is also delicious instead of tomato. For a milder flavor, sauté the onion briefly until translucent and then let cool.
