Quick Quiche Lorraine with puff pastry

Ingredients for 6 servings:

  • 1 pack of fresh puff pastry (round)
  • 250 g smoked bacon
  • 2 large onions
  • 4 eggs
  • 200 g cheese, grated (Gruyère)
  • 250 g crème fraîche
  • salt and pepper
  • nutmeg

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Preheat the oven to 200°C (fan-assisted). Line a greased 28 cm springform pan with the puff pastry. Dice the bacon and onions. Lightly fry the bacon in a hot pan without fat, then add the diced onions and fry briefly. Pour both into the springform pan and spread lightly over the pastry. In a bowl, whisk the eggs with the cheese and crème fraîche. Season generously with pepper and nutmeg, and add a little salt. Pour the mixture over the bacon and onions. Bake the quiche on the bottom rack for 40 minutes. Serve with a green salad.
