Hot Ebbelwoi (apple wine)

Ingredients for 5 servings:

  • 1 liter of apple cider
  • 1 orange(s)
  • 1 cinnamon stick(s)
  • 2 star anise
  • 3 carnations
  • ½ vanilla pod(s), cut lengthwise
  • 1 tsp grated lemon zest, alternatively 1 tsp lemon juice)
  • 3 tbsp, crushed rock candy, brown, approx. 70 g

Instructions

Working time approx. 10 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 10 minutes; Total time approx. 2 hours 20 minutes

Hessian alternative to mulled wine

Squeeze the juice from the orange and pour it into a saucepan along with the Ebbelwoi. Add the remaining ingredients to the pan and heat slowly to around 80 degrees Celsius with the lid closed. The Ebbelwoi should not boil. Let it steep for at least an hour (two hours is better) with the lid closed and then pour the liquid through a fine-mesh sieve into a pouring container. Pour the Ebbelwoi into ribbed (apple wine) glasses or, after letting it cool briefly, use a funnel to return it to the empty Ebbelwoi bottle. The Ebbelwoi can be stored unrefrigerated in the bottle for around a week. To heat it, pour 200 ml directly into a glass or cup and heat in the microwave at 900 watts for around 60 seconds. Whether cold or hot, the Schobbe is and always will be a good drink. Cheers!
