Vareniki with cherries

Ingredients for 4 servings:

  • 400 g flour
  • 2 eggs
  • 150 ml water
  • ½ tsp salt
  • 1 jar morello cherries
  • possibly sugar

Instructions

Working time approx. 1 hour; Rest time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 40 minutes

Pour the cherries into a sieve and collect the juice. Put the flour in a mixing bowl, make a well, and add the water, egg, and salt. Knead the dough into a firm dough, cover with a cloth, and let it rest for 20-30 minutes. Roll the dough into a rope (1.5-2 cm in diameter) and cut off pieces (1-1.5 cm thick). Roll these pieces into cookies. You can also roll the dough out to a thickness of about 2 mm and then cut out round pieces using a glass. Place about 3-4 cherries on each piece, fold them together, and press the edges together with a fork to create fringes. Place the vareniki in boiling salted water. Once the water has returned to a boil and the vareniki have floated to the surface, let them stand for another 2-3 minutes. Remove from the water with a slotted spoon, place on a serving platter, and pour over the hot cherry juice. Serve with sour cream while still cold. Preparation of the juice: Heat the collected juice and sweeten with sugar if necessary.
