Ingredients for 4 servings:

  • 2 kg ribs (sharp ribs)
  • 6 tbsp tomato ketchup
  • 2 tbsp honey, e.g. acacia honey…
  • 3 tbsp soy sauce, dark
  • 3 tbsp sherry, medium-dry or some balsamic vinegar
  • 2 slice(s) ginger, chopped finely
  • Salt and pepper, freshly ground
  • 1 tsp spice mix (barbecue spice)

Working time approx. 15 minutes; Total time approx. 15 minutes

Spare ribs for grill or oven

Cut the spare ribs into palm-sized portions, clean them, and remove any excess fat. Gently heat the tomato ketchup, soy sauce, and honey in a saucepan until the honey has dissolved. Season to taste with the sherry and the remaining spices. Place the ribs top-down on the grill and grill for about 5 minutes, then turn them over and brush with a little barbecue sauce. Turn them over again after 5 minutes and brush the underside. Continue this process until the ribs are nice and crispy and covered in a deep red glaze. Enjoy any leftover sauce with the ribs.
