Ingredients for 1 servings:
- 4 large eggs
- 320 g sugar
- 190 g oil
- 400 g pumpkin flesh, from the jar
- 270 g flour
- 3 tsp baking powder
- 2 tsp cinnamon
- 1 tsp salt
- 200 g cream cheese
- 110 g butter, soft
- 1 packet of vanilla sugar
- 220 g powdered sugar, sifted

Pour the pumpkin cubes into a sieve, rinse with cold water, and drain well, patting them dry if necessary. Finely puree the pumpkin flesh and whisk with the eggs, sugar, and oil. Mix the dry ingredients together and slowly stir into the pumpkin mixture. Grease a rectangular baking dish and pour the mixture into it. My baking dish measures 23 x 33 cm; the liquid batter should be about 1.5-2 cm thick; it will rise to about 3 cm. Bake at 200°C (400°F) with top/bottom heat for about 30-40 minutes. If necessary, test with a toothpick to see if it’s baked through. Mix the cream cheese, butter, vanilla sugar, and powdered sugar to make a glaze and spread it over the cooled cake. Cut into small squares to serve. A traditional recipe from the USA that is a must-have in the fall.
