Strawberry jam with lemon balm

Ingredients for 1 servings:

  • 1 kg strawberries, washed, cleaned and chopped
  • 2 stalks of lemon balm
  • ½ lemon(s)
  • 1 kg gelling sugar 1:1

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Mix the strawberries with the gelling sugar. Let it steep for a few hours. Stir in the juice of half a lemon, bring to a boil, and boil gently for about 5 minutes (test for gelling). In the meantime, wash the lemon balm, pat dry, and finely chop. Stir the lemon balm into the cooked jam and pour the jam into the prepared, hot-rinsed jars. Variations: Stir in 1-2 tablespoons of fruity liqueur (berry, maraschino) or Campari with the lemon balm. Makes about 5 jars of 200 ml each.
