Ingredients for 1 servings:

  • 150 g corn flour, fine
  • 75 g flour
  • 2 tbsp cornstarch
  • 1 tbsp baking powder
  • ½ tsp salt (onion salt)
  • ½ tsp chili powder
  • 1 tsp Cajun spice mix
  • 1 clove(s) garlic, finely chopped
  • 2 tbsp onion(s), grated
  • 2 eggs, lightly beaten
  • 180 ml milk
  • 1 tbsp lard
  • oil

Instructions

Working time approx. 40 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 40 minutes

Cornflour doughnuts

Mix the flour, cornstarch, baking powder, onion salt, chili, and Cajun seasoning well. Add the grated onion and beaten eggs and mix well. Gently heat the milk and lard in a small saucepan until the fat has melted. Pour over the flour mixture and mix well. Let cool. Heat the oil in a deep frying pan. Add the batter a tablespoon at a time and fry until the doughnuts have risen and are golden brown. Turn once or twice. Do not add too many doughnuts to the pan at once, as otherwise the fat will cool and the doughnuts will absorb too much of the fat. Drain on kitchen paper and serve warm. Tip: The oil must be at least 3 cm deep in the pan. The doughnuts should float in the oil.
