Ingredients for 4 servings:
- 200 g meat sausage, in one piece
- 1 onion(s)
- salt and pepper
- 6 tbsp vinegar, mild
- 2 tbsp cucumber juice or balsamic vinegar
- 3 tbsp oil, neutral in taste (e.g. safflower oil)
- 1 bunch of chives
- 100 g mustard, homemade mustard or Munich white sausage mustard
- 1 bunch of radishes
- 2 cucumber(s) , (pickles)

Peel the skin and cut the sausage into 3 cm thin slices, arrange in a circle on a platter. Peel the onion, cut it into wafer-thin rings and arrange it on top of the sausage. Season with a little salt and plenty of coarse or fine freshly ground pepper. Mix the vinegar, cucumber juice and oil and drizzle over the salad. Cover and let it marinate for 45 minutes in a cool place, but do not refrigerate. To serve, wash the chives, pat dry and cut into fine rolls. Cut the radishes and drained cucumbers into small cubes or also into thin slices. Place the chives, radishes, cucumbers and mustard in separate bowls and serve with the sausage salad. Serve with caraway bread, wholemeal rolls or hearty farmhouse bread and butter.
