Ingredients for 6 servings:

  • 1 cube of yeast, fresh
  • 2 tbsp sugar
  • 500 g margarine
  • 1 kg flour
  • 1 egg(s)
  • 1 tsp salt
  • 150 ml milk, warm
  • Egg yolk, for brushing
  • Sugar, for the baking board

Russian pastries

Make a yeast dough from all the ingredients; it has the consistency of shortcrust pastry, so it doesn’t need to rise. Divide this dough into 9 equal portions and shape into balls. Roll out the balls, one at a time, on a baking board sprinkled with sugar (that’s why there’s so little sugar in the dough). Cut each into 12 cake slices, dab a teaspoon of jam on the wide side, and roll up towards the tip of the dough. This makes a total of 108 small jam croissants. Finally, brush the croissants with egg yolk. Bake on a baking tray lined with baking paper at 180°C (350°F) for about 20-25 minutes, using a fan oven at 150°C (300°F).
