Ingredients for 4 servings:
- 500 g gooseberries, green
- 125 g sugar
- 400 ml white wine
- 300 g kiwi(s)
- 40 g cornstarch
- 2 tbsp water, cold
- 25 g pistachios, chopped

Gooseberry-Kiwi
Wash the gooseberries and remove the stems and blossoms. Cook them with wine and sugar until tender, then sieve them (or use only half, depending on your taste; I prefer plenty of coarse pieces). Peel and slice the kiwi. Mix the cornstarch with the water and stir into the gooseberry puree. Bring to a boil briefly, then add the kiwi and chopped pistachios. Serve well chilled with whipped cream or vanilla sauce.
