Ingredients for 4 servings:
- 250 g butter
- 300 g powdered sugar
- 4 eggs
- 125 g potato flour (starch flour)
- 125 g flour (also delicious with spelt flour)
- 1 lemon(s), grated peel, untreated
- 1 pinch of salt
- 1 bacon rind (for greasing, also works with oil)

Cream the butter until fluffy, then gradually stir in 200g of icing sugar, 4 egg yolks, the potato and wheat (or spelt) flour, the grated lemon zest, a pinch of salt, and finally the stiffly beaten egg whites. Beat the batter until it bubbles. Rub the waffle iron with the rind (careful not to burn your fingers!) or use oil, heat it up, and pour 1 tablespoon of batter into the center of the iron, spreading it out in all directions. In 2-3 minutes, the first round will be ready to enjoy. Carefully lift out with a knife and place on a wire rack, sprinkle with some icing sugar, and cut the waffles apart. Serve stacked in a tower. This mixture makes about 25 waffles.
