Ingredients for 1 servings:

  • 2 tbsp sea salt
  • 1 tbsp garlic granules
  • 1 ½ tbsp onion granules
  • 2 tbsp sweet paprika powder, possibly half smoked paprika powder
  • ½ tbsp black pepper
  • 1 tsp chili powder, medium hot
  • 1 pinch(s) of cayenne pepper
  • 1 tbsp cumin
  • 1 tsp, heaped brown cane sugar
  • possibly thyme and/or oregano

Instructions

Working time approx. 5 minutes; Total time approx. 5 minutes

Southern seasoning mix “Cajun style”, for seasoning or marinating

Grind all spices freshly with a pestle or grinder, preferably without pre-ground spices. Mix well and transfer to a dry, airtight container to preserve the flavor. If you like, you can also add dried thyme and/or oregano. These should not exceed 2 teaspoons in total. If you have Spanish smoked paprika, replace half of the regular paprika with it. It’s wonderful for seasoning meat or poultry (or mixed with oil as a marinade), or for flavoring Southern-style dishes (e.g., blackened chicken or jambalaya).
