Crashed Potatoes

Ingredients for 1 servings:

  • Potato(s), any quantity
  • olive oil
  • salt and pepper
  • rosemary

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Boil the potatoes with their skins on in salted water until tender, but still slightly firm enough to pierce with a fork. Meanwhile, preheat the oven to 220°C (425°F). Drain the potatoes, let them steam, and place them on an oiled or parchment-lined baking sheet. Lightly mash them with a potato masher (a fork will also work) until they are about as flat as a typical cookie. Brush the surface with olive oil and season with salt, pepper, and rosemary. Bake the potatoes for 15-20 minutes, or until crispy.
