Baked potato wedges

Ingredients for 2 servings:

  • 5 m.-sized potatoes, quartered
  • 6 tbsp olive oil
  • Salt and pepper, white
  • 2 medium-sized onions, roughly chopped
  • Herbs (Tuscan herbs: basil, thyme, rosemary), shredded.

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Peel the potatoes or wash and brush them thoroughly, depending on whether you want to leave the skin on. Quarter them lengthwise and place them in a bowl. Sprinkle with salt and pepper, add the olive oil, and toss the potatoes thoroughly. Place them on a baking sheet lined with parchment paper or in a baking dish and bake at 175°C for 30-35 minutes. Remove from the oven and add the onions and herbs. Then bake for another 15 minutes. Once the potatoes are tender, enjoy them. You can also add halved tomatoes (season with just a little salt and use a very small amount of oil) along with the onions.
