Ingredients for 4 servings:
- 500 g pumpkin flesh, cooked and pureed
- 5 tbsp flour
- 2 tsp baking powder
- 1 large egg(s), fresh and at room temperature
- some butter, for frying
- some sugar, white
- some cinnamon, ground
- some lemon slices
- Salt

Pumpkin Pancakes
Combine the pumpkin flesh with flour, baking powder, and a pinch of salt. Beat the egg until frothy and stir in, then mix everything thoroughly. Heat the butter in a pan and add the batter a tablespoon at a time. Cook the pancakes until golden brown on both sides. Sprinkle with the sugar and cinnamon mixture and serve garnished with lemon slices.
