Spice cake – also called "Ulmer" in Franconia

Ingredients for 1 servings:

  • 4 eggs
  • 250 g butter, room temperature
  • 250 g sugar
  • 300 g flour
  • 2 ½ tbsp baking cocoa
  • 1 tsp ammonium bicarbonate
  • 1 pack of gingerbread spice
  • 1 tsp cinnamon
  • 200 ml milk, lukewarm

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Simple and fast

Mix the butter with the eggs and sugar until light and fluffy. Then combine the dry ingredients and add them to the butter, sugar, and egg mixture, a tablespoon at a time, alternating with the milk. The amount of milk you ultimately need depends on the size of the eggs. The batter should be slightly thicker than a sponge cake batter. Spread it onto a baking sheet lined with parchment paper and bake at 175 degrees Celsius (350 degrees Fahrenheit) for about 20 minutes. Let it cool slightly. Decorate the cake as desired. Our favorite is the Ulmer cake with chocolate icing and colorful sprinkles.
