Ingredients for 6 servings:

  • 900 ml milk (or half milk, half water)
  • 250 g corn flour, yellow or white
  • 3 eggs, separated
  • 4 tbsp butter, melted
  • 1 ½ tsp salt
  • ½ tsp pepper, freshly ground

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Preheat the oven to 190°C (375°F). Bring the milk to a boil in a large saucepan over medium heat. Slowly stir in the cornmeal and cook for a few minutes, stirring constantly, until it thickens. Whisk in the egg yolks, butter, and spices. In a second bowl, beat the egg whites until stiff peaks form. Fold into the batter and pour the batter into a 2-liter baking pan. Bake for 30-40 minutes, until the bread has risen slightly and the top is golden brown.
