Maultaschen on chicory and date salad

Ingredients for 2 servings:

  • 1 pack of Maultasche(s)
  • oil
  • 500 g chicory
  • 1 handful of dates
  • 1 small onion(s), red
  • some parsley
  • 4 tbsp olive oil
  • 1 tbsp lemon juice, freshly squeezed
  • 1 tsp honey
  • 1 tsp, heaped horseradish (creamed horseradish)
  • 2 tbsp balsamic vinegar, white – better still white balsamic vinegar cream
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel the chicory leaves and wash them in lukewarm water. Drain and cut into strips. Slice the onion into very fine rings. Pit the dates and cut into strips. Chop the parsley and mix well with the remaining dressing ingredients. Season with salt and pepper. Cut the Maultaschen into strips and fry in a pan with a little oil until crispy all over. Toss the salad with the dressing and arrange on plates. Place the Maultaschen on top of the salad while still hot. Garnish with parsley and serve.
