Ingredients for 4 servings:

  • 250 g rice
  • 700 ml tomato juice or
  • 500 ml tomato(s), pureed
  • 250 ml water
  • 1 cube of stock
  • 1 bell pepper(s), green or yellow or red
  • 4 tbsp peas
  • 1 onion(s), diced
  • 1 stalk(s) leek
  • 4 tbsp corn
  • 2 carrots, sliced
  • 250 g turkey meat, diced or
  • Mussels, crabs, shrimps
  • 1 piece(s) mozzarella, for gratinating
  • 6 slices of processed cheese
  • Cheese, grated

Instructions

Working time approx. 50 minutes; Total time approx. 50 minutes

This casserole is especially good for using up leftovers. You can basically add anything you have around the house. And, depending on your taste or preference, you can also make it without meat or fish. Brown the meat first. Then briefly simmer the rice in the tomato juice with all the vegetables and the stock cube. Add the meat, fish, or mussels. Stir well. Sprinkle with cheese; leftover cheese is also a great way to use it. Bake everything in the oven at 220°C for about 30-40 minutes. You could also serve it with some crème fraîche or sour cream.
