Young matjes with bacon and green beans

Ingredients for 2 servings:

  • 4 fish fillets (matjes double fillet)
  • 400 g beans, green, cleaned
  • 440 g potatoes, boiled cold
  • 4 onions, chopped
  • 80 g bacon, streaky, diced
  • g butter
  • savory
  • oil

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

best in May/June, that’s when the matjes are at their best.

Best done the day before: Boil waxy potatoes with the skin on until not too soft. Rinse with cold water and peel off the skin. On the day of: Cut the cold potatoes into evenly sized slices or cubes. Heat plain vegetable oil in a large pan (Teflon or one that doesn’t stick quickly) and fry the diced bacon. Now add the potatoes and let them sizzle slowly. Once the potatoes have slowly started to brown, add the diced onions. Cook until medium brown. Finally, season with salt and pepper. Meanwhile, cook the beans in boiling water with a little savory. Then toss in butter and season with salt and pepper. Serve the herring with the beans and serve the homemade fried potatoes on the side.
