Ingredients for 4 servings:
- 750 g potato(s), waxy
- 200 g bacon, streaky
- 1 bunch of spring onions
- 2 tomatoes
- 200 g mushrooms
- 2 pieces of bratwurst
- 150 g crème fraîche
- salt and pepper
- oil
- Thyme
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Boil the potatoes with their skins on, peel, and slice. Cut the bacon into thin slices and chop the spring onions and tomatoes into small pieces. Brush the mushrooms and halve them. Fry the bacon in a pan until crispy and set aside in a bowl. Squeeze the sausage meat out and shape into small dumplings, then fry in the bacon fat until nicely browned. Fry the spring onions for about three minutes. Season everything with salt and pepper and add them to the bowl with the bacon. Heat a little oil in the pan and fry the potatoes and mushrooms for about 10 minutes, turning occasionally. Then return all the ingredients to the pan and mix well. Simmer for at least 5 minutes and then season. Garnish with crème fraîche and thyme when serving. You can use the potatoes from yesterday to create something different than the usual fried potatoes!
