Ingredients for 4 servings:

  • 800 g white cabbage
  • 1 onion(s)
  • 1 tsp clarified butter
  • 200 ml meat broth, hot
  • 6 tbsp vinegar
  • 6 tbsp oil
  • 1 tbsp caraway seeds
  • 1 tsp sugar
  • Salt
  • Pepper, freshly ground white

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

as a side dish

Clean the white cabbage and then grate it into fine strips. Peel and finely chop the onion. Put everything in a bowl and mix well with the salt. Heat the clarified butter in a pan, add the cabbage mixture, immediately pour over the hot meat broth, remove from the heat, and let it steep. Don’t fry the cabbage; just toss it briefly in the clarified butter! Make a salad dressing with vinegar, oil, caraway seeds, pepper, and sugar and pour it over the cabbage. Mix well. Once the cabbage is ready, let it stand for at least an hour to steep. It tastes great as a side dish to Bavarian roast pork or Bavarian potato salad!
