Quark dumplings made from mashed potatoes

Ingredients for 2 servings:

  • Potato(s) (mashed potatoes), rest
  • Quark, the same amount as the mashed potatoes
  • 2 eggs
  • 2 tbsp flour
  • 1 tbsp semolina
  • some lemon(s), grated peel
  • some sugar and vanilla sugar
  • oil

Perfect for anyone who doesn’t like throwing away food!

I always make Quarkkeulchen when I have leftover homemade mashed potatoes, as I learned many years ago from an old lady in Saxony. It’s a great way to repurpose mashed potatoes (but only homemade ones!) into a new dish! Here’s the recipe – the quantities depend, of course, on the amount of mashed potatoes, but you’ll quickly get the hang of it: Blend the mashed potatoes, quark, and eggs with a mixer until smooth, then add the flour and semolina. If you want a sweet dish, add lemon zest and sugar. Let the whole thing rest for half an hour so that the gluten in the flour and the semolina can “unfold.” Then, slowly fry the mashed potatoes in a pan in oil; not too hot, so they turn golden yellow and not black. Turn them over and finish frying. You can serve them as a dessert, but if you omit the sugar and lemon zest, you can use them as a delicious side dish to all sorts of dishes – the sky’s the limit.
