Ingredients for 2 servings:
- 150 g zucchini, green
- 8 mint leaves
- 1 ½ tbsp sunflower seeds
- 1 tbsp olive oil
- 1 pinch of salt
- 1 pinch(s) of pepper
Instructions
Working time approx. 10 minutes; Rest time approx. 10 minutes; Total time approx. 20 minutes
Trim the ends of the zucchini (the green ones are softer and not as hard in the skin) and cut into slices approximately 0.5 mm wide. Finely chop the mint and sunflower seeds, mix with a little salt, pepper, and olive oil. Place on the zucchini slices and let marinate briefly.
