Broccoli salad with walnuts and cranberries

Ingredients for 4 servings:

  • 1 head of broccoli
  • 2 spring onions
  • 1 handful of walnuts
  • 1 handful of cranberries
  • 1 small onion(s)
  • 2 tbsp cane sugar
  • 2 tbsp Balsamic vinegar bianco
  • 1 tbsp mayonnaise
  • 3 tbsp natural yogurt
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

with raw broccoli

Cut the raw broccoli into very small florets and the spring onions into rings and place them in a bowl. Roughly chop the walnuts and cranberries and add them. Finely chop the onion and combine with the remaining ingredients to make a sauce. Pour the dressing over the broccoli and stir well. Let the salad sit for a while and season with salt and pepper if desired. This salad can be prepared a day ahead. Raw broccoli tastes simply amazing in this combination!
