Marzipan muffins

Ingredients for 12 servings:

  • 75 g marzipan paste
  • 35 g pistachios, chopped
  • 250 g yogurt, low-fat (up to 1.8% fat) with raspberry flavor
  • 3 eggs
  • 400 g flour
  • 1 tsp baking powder
  • 40 g margarine, semi-skimmed
  • possibly sweetener, a few drops of liquid
  • 30 g powdered sugar
  • 2 tbsp lemon juice

Working time approx. 20 minutes; Total time approx. 20 minutes

Mix the marzipan with the pistachios. Make a batter from the eggs, yogurt, flour, baking powder, and margarine. Season the batter with sweetener, if desired. Pour half of the batter into a silicone muffin tin. Divide the pistachio marzipan into 12 pieces, place each in the center, and fill with the remaining batter. Bake in a preheated oven on the middle rack at 180 degrees Celsius for about 25 minutes. For the icing, mix the icing sugar with the lemon juice until smooth.
