Ingredients for 1 servings:

  • 10 g date(s)
  • 30 g potato fiber
  • 75 g low-fat curd cheese
  • 1 egg(s)
  • some rum flavor
  • 1 tbsp powdered sugar (erythritol powdered sugar)

Instructions

Working time approx. 45 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour 10 minutes

Cover the dates with water. Let stand briefly. Then puree and place in an ice cube tray in the freezer. Knead the potato fibers, low-fat curd cheese, 1 egg white, rum flavoring (optional), and erythritol powdered sugar into a dough. Preheat the oven to 160°C (fan/convection oven). Then form dumplings and place the date ice cube in the center. Brush the dumplings with the remaining egg yolk and sprinkle with more erythritol. Bake the dumplings on the middle rack of the oven for 20-25 minutes.
