Ingredients for 4 servings:

  • 1 jar sour cherries (morello cherries)
  • 210 g rolls, stale
  • 300 ml milk
  • Butter for the mold
  • 2 eggs
  • 50 g butter, soft
  • 60 g sugar
  • 1 tbsp vanilla sugar
  • 2 tsp baking powder
  • 4 drops of bitter almond flavor
  • breadcrumbs

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 55 minutes

Drain the cherries thoroughly in a sieve. Crumble the white bread, pour over the milk, and let it sit until all the liquid is absorbed. Grease a baking dish and sprinkle with breadcrumbs. Separate the eggs. Beat the egg whites until stiff peaks form. Mix the soaked bread with the egg yolks, butter, sugar, vanilla sugar, baking powder, and cooking oil, then carefully fold in the cherries and beaten egg whites. Bake in the baking dish on the middle shelf of a preheated oven (200°C/400°F) (gas mark 3) for 30 minutes. Dust with powdered sugar. Serve warm. Serve with vanilla sauce.
