Ingredients for 4 servings:
- 170 g okara (residue from the soybeans)
- 50 g hazelnuts, ground
- 70 g oat flakes (I used whole grain)
- 1 pinch of salt
- 3 tbsp brown sugar
- 300 ml soy milk (soy drink) or cow’s milk (not vegan)
- 1 cup spelt flour (ground by myself)
- some vegetable oil for frying
- 6 peach(s)
- 3 tbsp margarine (soy margarine) or butter (not vegan)
- 4 tbsp brown sugar
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Vegan dessert. Okara is a residue from the production of soy milk (soybeans).
Pour the milk over the oat flakes and let them swell for about 10 minutes. Then stir in all the other ingredients and let them swell for a bit longer. Form patties and fry in oil until golden brown on both sides. In the meantime, pit and skin the peaches. Cut the peaches into wedges. Heat the butter, add the sugar, and let them caramelize slightly. Add the peach slices and cook briefly. They shouldn’t fall apart. You can also use other fruits. An orange sauce, for example, tastes very good (in this case, use 4 oranges).
