Ingredients for 1 servings:

  • 50 g wheat bran
  • 300 g low-fat curd cheese
  • 100 g flaxseed, crushed
  • 100 g ground almonds
  • 5 egg whites
  • 1 packet of baking powder
  • 1 handful of hazelnuts or sunflower seeds
  • 1 tsp salt

Preparation is really super easy! You can put all the ingredients directly into a bowl. To do this, place your bowl on the kitchen scales. You can mix the batter with a hand whisk or a spoon. I only had a 20 cm springform pan, unfortunately not a loaf pan, but that’s not a problem at all. Line the springform pan or loaf pan with baking paper. To do this, crumple the paper. This makes it easier to place it in the springform pan. After you’ve poured the bread dough into the pan, you can sprinkle sunflower seeds or any kind of nuts or seeds on top. The bread is baked at 170°C (top/bottom heat) for 50-60 minutes. Protein bread also contains carbohydrates, but not many. The bread has healthy fats from the seeds and kernels and, above all, plenty of protein.
