Fan-shaped pesto chicken with oven-baked vegetables

Ingredients for 3 servings:

  • 3 chicken breast fillets
  • 6 tomatoes
  • 2 peppers
  • 1 bunch of spring onions
  • 2 balls of mozzarella
  • 3 tbsp pesto (basil-tomato pesto), ready-made or homemade
  • salt and pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Low-carb

Dice the tomatoes and bell peppers. Slice the spring onions into rings. Divide the vegetables among 3 small dishes, season with salt and pepper. Wash the chicken breast fillets, season with salt and pepper on both sides, and make a fan-shaped cut on one side. Slice the mozzarella. Spread the fillets with pesto and place a slice of mozzarella into each cut fan. Place the chicken breast on top of the vegetables and bake in a preheated oven at 180°C (top/bottom heat) for about 30 minutes. Finally, turn on the grill for 5 minutes. Serve with a green salad.
