Ingredients for 2 servings:
- 500 g zucchini
- 250 g minced poultry
- 150 g mushrooms, cleaned
- 1 can of tomatoes, chopped
- 1 onion(s)
- 1 garlic clove(s)
- Mixed herbs, chopped
- salt and pepper
- vegetable broth
- 100 g cheese, grated, light

Low-carb
Halve and hollow out the zucchini. Mix the minced meat with the onions and garlic. Add the mushrooms, chopped tomatoes, vegetable stock, salt, pepper, and herbs. Brown in a little oil. Stuff the minced meat into the hollowed-out zucchini. Place the canned tomatoes and mushrooms in a baking dish, add the stuffed zucchini, and sprinkle with cheese. Bake in a preheated oven at 180°C (top/bottom heat) for about 25 minutes. Tip: You can also mix the tomatoes and mushrooms into the minced meat.
