Ingredients for 2 servings:

  • 130 g spelt flour type 1050
  • 2 tbsp xylitol (sugar substitute)
  • ½ tsp cream of tartar baking powder
  • 1 pinch of salt
  • 150 ml oat milk (oat drink), warm
  • 1 egg(s)
  • 2 tbsp oil
  • 1 vanilla pod(s), including the pulp
  • 20 g chocolate
  • e.g. blueberries or other fruits, frozen
  • e.g. maple syrup

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Sift the flour and mix with xylitol, cream of tartar, and salt. Combine the warm oat milk with the egg, oil, and vanilla bean seeds. Blend all ingredients until smooth. Grate the chocolate and fold it evenly into the batter. Fry the pancakes in a non-stick pan with a little oil. Garnish with frozen blueberries or other fruit, if desired, and drizzle with maple syrup.
