Ingredients for 2 servings:

  • 300 g zucchini
  • 100 ml vegetable stock
  • 1 large red bell pepper(s)
  • 1 large bell pepper(s), yellow
  • some olive oil
  • some salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Heat some oil in a pan. Wash and finely chop the zucchini. Wash, deseed, and finely chop the two bell peppers. Briefly fry the vegetables in the hot oil and deglaze with the vegetable stock. Simmer for about 5 minutes. Season with salt and pepper and serve.
