Ingredients for 4 servings:

  • 1,000 g apples
  • 150 g sugar
  • 1 packet of vanilla sugar
  • 1 egg white

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Core the apples and roast them in the oven (about 20 minutes at 180°C, depending on the size of the apples; they should be really nice baked apples). Then strain and chill. Beat the egg whites with the vanilla sugar and sugar until very foamy. Add the cooled applesauce and continue stirring for at least 5 minutes or longer until a firm, thick foam forms. Ladle into glasses and serve with butter biscuits or ladyfingers.
