Bean and goat cheese salad

Ingredients for 4 servings:

  • 750 g green beans
  • Salt
  • ½ bunch radishes
  • 100 g leaf lettuce (salad mix)
  • 2 shallots
  • 4 tbsp Balsamic vinegar, white
  • 2 tbsp grainy mustard
  • pepper
  • 4 tbsp olive oil
  • 2 rolls of goat cheese (soft goat cheese), 200 g each
  • 2 tbsp honey

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 8 minutes; Total time approx. 38 minutes

Vegetarian and filling

Cook the beans in salted water, rinse in ice-cold water, and drain. Trim and slice the radishes. Wash the lettuce and spin dry. Cut the goat cheese into 12 slices and place on a baking sheet lined with baking paper. Brush with honey and bake in a preheated oven at 200°C (convection oven) until lightly browned. For the dressing, dice the shallots and mix well with the vinegar, mustard, salt, and pepper. Whisk in the oil. Arrange all salad ingredients on plates, drizzle with the dressing, and serve with the goat cheese. Serve with baguette.
