Sweet pumpkin ragout

Ingredients for 4 servings:

  • 40 g sugar
  • 150 g pumpkin flesh (e.g. butternut)
  • 2 bulb(s)
  • 120 g plums
  • 100 ml water
  • 1 tsp cornstarch
  • 3 tbsp Amaretto

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel the pumpkin and cut into small cubes (1 cm), core the pears and cut into small pieces, and core the plums and quarter them. Caramelize the sugar in a small pan, pour in the water and bring to a boil while stirring. Add the pumpkin and pear pieces and simmer over low heat for about 4-5 minutes. Add the plums and simmer for about 1 minute. Mix the cornstarch with the Amaretto until smooth, then stir into the ragout and reduce. If it becomes too thick, add a little water. The ragout can be served warm straight away, e.g. with a scoop of ice cream on top, but it is also delicious eaten cold.
