Cherry-lime jam with vanilla

Ingredients for 1 servings:

  • 500 g sweet cherries or sour cherries
  • 1 lime(s)
  • 1 vanilla pod(s)
  • 250 g gelling sugar, 2 : 1
  • 2 tbsp lime juice or lemon juice

Working time approx. 25 minutes; Cooking/baking time approx. 4 minutes; Total time approx. 29 minutes

Wash, stem, pit, and chop the cherries. If you don’t like chunks of fruit in your jam, puree the fruit. Rinse the lime in hot water and halve it. Slice one half and then cut it into pieces. Grate the zest from the other half and squeeze out the juice. Split the vanilla pod lengthwise and scrape out the seeds. If you like, you can cut the vanilla pod into small pieces, cook it with the mixture, and then sieve it again later. Place the cherries, grated lime zest, lime juice, lime pieces, vanilla seeds, and gelling sugar in a large saucepan. Bring to a boil, stirring occasionally, and simmer for 3-4 minutes, stirring occasionally. Test for settling. When the jam has the desired consistency, pour it into hot, rinsed, screw-top jars and turn upside down for about 10 minutes.
