Fruity red cabbage and carrot salad

Ingredients for 4 servings:

  • 3 tbsp oil
  • 2 tbsp honey
  • 2 tbsp mustard
  • salt and pepper
  • 200 g carrot(s)
  • 200 g red cabbage
  • 1 apple
  • 1 peach(s)
  • ½ small can of corn

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

First, make the dressing in a salad bowl. To do this, combine the oil, honey, and mustard. Season with salt and pepper to taste. Peel the carrots and grate them into the bowl. Cut the red cabbage into small strips and add them. (If you like, you can also grate it; I find it too fine.) Peel the apple and peach, core them, and cut them into small pieces, then add them to the salad. Then add the drained corn and mix everything together well. The salad tastes best when it’s been refrigerated overnight.
