Ingredients for 2 servings:
- 1 cup coconut drink, alternatively oat milk
- ¾ cup water
- 1 banana(s), ripe
- 1 pinch of vanilla
- 1 ½ cups oatmeal
- Desiccated coconut
Instructions
Working time approx. 15 minutes; Rest time approx. 5 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 25 minutes

Mash the banana, add it to a saucepan with the coconut milk and water, and bring to a boil. Add the vanilla and oatmeal, and bring to a boil briefly. Turn off the heat and let it steep. Garnish with shredded coconut. Optionally, add polenta. This makes the mixture creamy and more filling.
